Coming off the heels of a wildly successful WSi potluck complete with tamales, seven-layer dip, green chile, taco salad, Mexican lasagna, fresh pico de gallo, chicken mole, and table-side guacamole, we indulged in some banana/brownie/caramel sundaes. Needless to say, it was a feast and a half. If you happen to be entertaining tonight and want a traditional Mexican dessert, can we suggest the sweet goodness of a fresh batch of sopapillas?
The 5th of May is one day away, and we couldn't be more excited. We've got a little office party planned complete with sign-up sheet stocked with dishes each employee is bringing. From Homemade guac to tamales, from some of the best green chile we've had to some fresh pico de gallo, we're hoping someone brings in a batch of enchiladas as well. Our Christmas party had a batch that was too die for. Perhaps a little coaxing can get those to make another appearance.
